Hand harvested in the first week of September, Pin is whole cluster, directly basket pressed Sangiovese that was fermented spontaneously in stainless without temperature control and aged until May in stainless with a bit of batonnage in steel, It was gravity bottled without filtration or fining. (575 bottles produced.)

Puhaniz Rosso

Puhaniz Rosso

Puhaniz comes from a young parcel of Sangiovese, about 9 years old. Two thirds of the grapes were de-stemmed and crushed and a third was whole bunch macerated with punchdowns for the duration of the spontaneous alcoholic fermentation, which was 20 days. The grapes were basket pressed, aged in stainless steel without temperature control and bottled by gravity without fining or filtration.(1400 bottles produced)

Luna Tantum Rosso

Luna Tantum Rosso

Luna Tantum is a blend of 70% Sangiovese, 20% Syrah, 10% Cabernet Franc and reflects the composition of the vineyard itself in the percentages. The grapes were spontaneously fermented and went through a partial whole cluster maceration for the entire duration of alcoholic fermentation, which was about 18 days with frequent punch-down and basket-pressed. The wine was aged for six months in an old 10hl chestnut barrel and then six months in stainless steel. It was gravity bottled without filtration or fining. (1100 bottles produced)
